how to bake a chocolate cake
« on: April 12, 2005, 09:26:47 pm »

I'm a bit of a baking novice and made the chocolate orange cake, it was divine but my sponge was a bit dry, any tips? cocoa powder or real chocolate?

So do I.  I can't remember the last time I actually made one.

I made a disastrous one a few years back. The recipe said it would take an hour to cook - after an hour it was still liquid! I blame the recipe...  I was going through a stage of constant baking at the time; I had left my job and was having trouble getting a new one, and had also been dumped , so for some reason I tried to bake my troubles away!

Never mind, there are far worse ways of trying to cheer yourself up!

I've now remembered the last cake I made - it was for my husband's birthday about ten years ago and it turned out about one centimeter thick - I think the flour was out of date or something!

I use drinking chocolate not cocoa for a moist chocolate sponge.

I got the recipe originally from a Nigella Lawson article in the You Magazine. I expect it's in "How to be a Domestic Goddess"  or maybe even on-line.

If you put too much wine in the cake you could end up a bit tipsy. Imagine being breathalised and trying to explain you haven't had a drink just some cake.
