My choc and mint is ace - extra minty!!!!

I tried Bananas but the chemistry doesn't work.
The enzymes in the banana break down and cause the truffle to go semi liquid, which was a pity cuz it tasted absolutely gorgeous!

Just started doing my truffles WITH Belgian Chocolate and now I'm looking for more ideas
