I think it's rancid ice cream curdling away in the ice cream machine. They are health death traps round here. If the ice cream doesn't kill you with e-coli the van will knock you down and flatten you.
GC, most of the mass produced ice creams such as walls, etc have no dairy cream in them so the risk of defrost/freeze scenario being dangerous is low.
A sure way to tell if it has been subjected to temperature abuse is to look for ice crystals on it. If there buy another.
