ValrhonaAt 85% cocoa solids, this is one of the darkest bars that Valrhona produce. Made from African cacao, it's also one of the most delicious I've ever tasted. There is a hint of red fruit and woodiness, but the flavour is dominated by dark, tobacco notes. Even though it has such a high cocoa content, the chocolate is quite melt-in-the-mouth because of the amount of cocoa butter used. It also leaves little trace of acidity. This is very close to perfect chocolate heaven.
