Hi guys,
My names Max and I've just joined this forum. On reading an interesting book called the chocolate connisseur, how would you guys define 'premium chocolate'?

If it does not have vegetable fat in it but cocoa butter instead then that is a very good starting point.

High cocoa content is also a good indicator. 30% for milk choc is good and 60%+ for dark choc.
