ADDING MILK TO CHOCOLATE

calling all chocolate makers:

other than using condensed milk (which is too sugary) , is there an effective way of adding milk when making chocolate?  i usually use powdered milk, but the finish is too grainy and doesn't seem to taste as good as the real thing.  when i did use milk, it altered the texture of the chocolate.  the other ingredients i use include honey (as the sweetener rather than sugar) and cocoa powder and cocoa butter.

Hi,
As far as I know (and can tell from a quick look round) you can't add ordinary milk because of the water in it - hence why you have to use condensed milk.
I guess you could try evaporated milk as that's less sweet, but there's probably a good reason why milk chocolate has condensed milk in it ;)
