Chocolate Cake

Devils Food Cake

Ingredients:

Low-fat cooking spray
100g polyunsaturated margarine
150g light brown sugar
2 medium eggs
40g plain chocolate
100ml boiling water
150g plain flour
1/2 teaspoon baking powder
1 teaspoon of bicarbonate of soda
100ml low fat plain yogurt
1 teaspoon of vanilla essense

Filling
50g polyunsaturated margarine
50g icing sugar
1 teaspoon cocoa powder

1. Preheat the oven to gas mark 5/190 C/375 F. Spray 2 18cm (7 inch) cake tins with the low fat cooking spray, line the bases with baking parchment and spray again.

2. Cream the margarine and sugar together until light and fluffy. Add the eggs one at a time beating well between each addition.

3. Break the chocolate into a saucepan, pour in the boiling water and heat gently until smooth and thick. Cool a little and then add to the creamed mixture and blend well.

4. Sift the flour with the baking powder and bicarbonate of soda and add to the mixture with the yogurt and vanilla essense. Mix well and then pour into the prepared tins. Cook for 25 mins or until risen and a skewer inserted into the middle comes out clean.

5. Turn out the cakes and leave on a wire rack to cool. Meanwhile, make the filling by beating together the margarine, sugar and cocoa powder until fluffy then use to sandwich together the cooled cakes. Dust the top with cocoa powder or icing sugar to serve.

I make cakes and freeze them a lot. I get them out for Davids lunch and it stops me munchig on them!
