Salt-and-pepper chocolates launched
« on: November 22, 2008, 08:40:40 pm »
A range of chocolates is soon to be launched flavoured with some of the finest salts and peppers from around the world.

The unique Demarquette Pepper and Salt Collection will feature such ingredients as Hawaiian Black Volcano Salt, Fleur de Sel and Tasmanian Bush Pepper.

Demarquette say the unusual additions elevate the bittersweet flavour of the chocolate, add crunch and kick and enhance the presentation of chocolate with a crystal sparkle and fiery flair.

For centuries pepper has been used as a chocolate ingredient and salted chocolates are now becoming more widely available on the market, mainly using sea salt crystals.

The limited edition Pepper and Salt Collection comprises six freshly hand-made ganache chocolates. The world famous salts and peppers are infused in British cream which is blended with the world's highest quality chocolate from Valrhona.

Ingredients include Hawaiian Black Volcano salt, known for its detoxifying effects. The salt is evaporated with purified black lava rock which adds minerals.

The extraordinarily textured Fleur de Sel is often regarded as the world's finest salt. The "salt flower" blossoms on the surface of French salt ponds where the top layer of delicate crystals is hand-harvested.

And the leaves and fruit of the Tasmanian Bush Pepper complement the chocolate with a woody pepper zing, rich berry and a hint of green tea.

I've had salted caramel chocs from Hotel Chocolat and a lemon and pepper chocolate bar from some German company (got it in Home Bargains). Both were nice.

I'm not keen on 'spicy' chocolate, I know it's where all chocolate came from etc etc - guess I'm just too used to processed foods ;)
Last salty one I had was rococo, and couldn't eat much at all - sea salt + chocolate, no I want sea salt on fish + chips :)

Has anyone tried the Covent Garden soup of the month, Choc Full of Beans? It's a spicy bean soup with a hint of chocolate.

Tesco have it half price; Waitrose also stock it. It's nice; you can't actually taste the chocolate as such, but it does give it an extra something.
