Good luck Choccy Chick. It's easy - just add the liquid a couple of spoonfulls at a time and keep stirring!
Risotto is yummy... always best to use arborio rice for the best results. Has that nice sticky texture.
I love mushroom risotto too. Can't stand sun dried tomatoes though.
