Title: Secret to thick hot chocolate?
Post by: gue_tea on November 04, 2005, 02:41:14 am

I've been to Italy once to order hot chocolate and I find it really really intriguing. Very deep, thick and heavenly delicious. It looks as if a bit of buttery on the top, has thick a bit solid chocolate on top but has liquid form in the inside. I can still remember the taste

I wonder how to make this perfect hot chocolate.... Is there actually a machine to create this thick hot chocolate like how espresso is made by espresso machine? Or should it be total manual?

I know exactly the hot chocolate you are speaking of. I studied in italy this past spring and fell in love with the thick hot choclate. While I was there I asked one of the student (american) barista's how she did it. She steamed some milk with the steam wand of an espresso machine, but not fully up to temperature. Then she mixed in the hot chocolate mix (just a plain old powder) and steamed it some more. Once it was near temperature (the temp for milk for cappuccinos and such is 150-160d F) she slowed the steam down and for some reason that thickened it up. Now, I just tried to replicate that at home and didn't get the same results. However, I'm sure there is some trick I'm not getting. Once milk is past 170-180F is scalded. Perhaps it needs to get to that point? not really sure. Good luck!

The cafe across the road from me on the clifftop apparently does hot chocolate that is just like you get at ski resorts.  As I've never been in there or to a ski resort I wouldn't know.  Perhaps I ought to try it!

Bought my other half a bar of Spanish drinking chocolate. You take 40g of it break it into small pieces and warm through in milk till it becomes thick and creamy. This is how I imagined drinking chocolate when I first heard of it.

It is very tasty.
